The ebony handle fits perfectly with the brass bolsters.
The 11 cm model fits any size of hand,
(Closed length: 11 cm/ Opened length: 20 cm)
whilst the 12 cm is more suitable for a man’s hand.
(Closed length: 12 cm/ Opened length: 22 cm)

Ebony is considered to be a precious wood.

It is easily recognised due to its dark to black hue. It can more rarely be veined. It is a gleaming wood with very high polish and it is very heavy due to its high density. Ebony is a favourite amongst craftsmen and sculptors even though it is very hard to work.

Being so very heavy and hard, with its impeccable lustrous polish adding to its prestige, it is the wood of choice in making limited series, works of art or luxury ornaments.

Did you know that ebony is actually grey! Its distinctive darkness is due to a parasite. It is a mushroom that blackens the heart of the wood.

I bought an ebony handled 12cm Laguiole knife with corkscrew and brass bolsters. The item arrived very promptly and is of a high quality with a very solid finish and firm opening/closing action. The item was also very reasonably priced compared to other such knives. The only reason for not giving 5 stars is that some of the pin work on the handle decoration is slightly less than perfect.
