Laguiole design style ebony and izmir stone
12C27 steel blade (surgical stainless steel), 3mm thick, with a hardness of 56-57 HRC
It is ground (giving the blade its bevel), polished and honed.
Made from two 0.8 cm thick pieces of izmir stone and ebony wood, carved by hand to obtain its characteristic curves.
2 stainless steel plates are guillochéd and riveted between the spring and handle to ensure supple closing of the knife and enduring solidity.
Forged steel plates. The Bee is arc-welded, thus melting both metals into one. The guilloché work is then carved.

According to one legend, Napoleon was reported to have allowed the inhabitants of Laguiole to add a bee to the city’s coat of arms to reward them for their bravery. There is no documented evidence to prove the veracity of this story.
There is another interpretation deriving from the misappropriation of a term. Abelha is the Occitan word for bee and may be phonetically approximated to the term lobeyro, which is the screw assembly found in the same place as the bee on a Laguiole knife.
But one thing is for certain, the first bee appeared on a Laguiole knife in early 1909 and not all old knives carry the bee symbol.
A man’s face may also be found on some models, as well as a four-leaf clover (symbolising good luck), a scallop shell (in reference to the Camino de Santiago de Compostela), a smooth, unadorned fly... the possibilities are endless!
