The stag belongs to the deer family. But only males have antlers.
Their former antlers fall down and new ones grow out each year during the heat period, in order to reach their maximum size.
Because of antler's hardness prehistoric people used it to make sharpening tools. This is no doubt one of the hardest cutlery materials since it can't be shaped like an olive wood.

A knife as handsome as the English A Wright and Sons or the US Case XX. Beautifully wrought, showing careful and excellent craftsmanship. The blade is probably the sharpest I have seen for a knife right out to box. My hat is off to the artisans at Laguiole Actiforge

Superb quality knife. It takes, and keeps, a good edge, it is very well made and solid. The pivot is a little stiff but I regard this as a good thing - the blade is unlikely to fold up during use, which could cause injury. It is also aesthetically pleasing with the stag antler handles and the decorated metalwork. The finish is excellent. Stag horn is a natural substance so no two pieces will ever be the same and on my knife the handle is thicker on one side than the other but again this adds to the charm. I am extremely pleased with this knife and would not hesitate to recommend it. This model comes in three sizes so should suit most people.
